Sadly, Mountain Honey Blue Borage is no longer available. However we have found a replacement honey that hits all the high notes of the world famous Mountain honey brand. We are introducing "Kind of Blue" our newest honey style paying homage to the original Blue Borage honey.
The plant responsible for this wonderful honey, The Southern Rata, is perhaps one of the most finicky of honey source plants. It thrives in a remote area of New Zealand that has extremely high rates of rainfall. It also has a tendency to bloom on an erratic and unpredictable schedule.
The Southern Rata may not blossom for several seasons and therefore cannot be relied upon to consistently produce the flowers that ultimately yield this prized honey. When tasting for the first time this honey may surprise you with its intensity. Since this is a monfloral, glucose dominant honey, organic Rata has a big, intense initial aroma and flavor. Organic Rata honey is a soft, off white finely chrystalline honey with a golden amber liquid that separates easily. Rata honey must be stirred before use for best results.
On the tongue Organic Rata Honey feels like very creamy crystalline sugar. It has a very complex taste, first with an intense sweetness which then melts into a silken buttercream flavor. Many people compare the overall flavor as similar to honey butter. Personally we think there is a hint of praline along with the buttery flavor. This honey is complex! Over time this honey will surprise you with its multiple layers of flavor. In our home Rata is the favorite.
